I didn't use to be a huge fan of "Gingerbread", but recently I've come to appreciate it more. Something about an episode about mob mentality being purposely directed towards outsiders that rings relevant today, maybe... Also, despite the (considerable) flaws of that ep, I do love the fact that Buffy killed Hansel and Gretel. It's just such a beautifully wacky piece of canon that I can't help but want to mention it in fic. (I've had Buffy brag about it before.)
