I think, based on guesses and input from people who have read the books, that babies captured by the Night King grow up to be White Walkers.
Which raises the question of just what they did until they were big enough to ride an undead horse. Was there a White Walker Kindergarten up there somewhere? Did the Night King have to give horsey rides to White Walker toddlers? Did any of them ever go "You're not my real daddy! I didn't ask to be born!" and slam the door and blast Nirvana?
